A Caribbean feast 🇯🇲 Jerk Portobello mushroom steaks with mango and avo salsa & stewed black bean rice 💃🏼🍄 OH MY GOD you would not believe that the steaks are literally just mushroom, the texture is so juicy and it almost creates its own gravy 😱 I have for a long time been admiring @sassinabellina’s food posts and her jerk steaks looked toooo good to resist so I had to recreate 🤩

🍄 jerk mushroom steak recipe 🍄 serves 1
• 2 portobello mushrooms
• 1tbsp olive oil
• 1 heaped tsp jerk seasoning
• 1tbsp bbq sauce
• dash of soy
• 1 crushed garlic clove

– whisk all these ingredients in a bowl (except the shrooms), then marinate with the portobello mushrooms whole (for lit 5 mins)
– line a tray with aluminium foil, place the mushrooms in there and pour over the sauce and wrap the mushrooms in the foil so they are covered
– bake at 180 for 35ish mins (till v soft) then take out, slice up and serve with the juices drizzled over top 😋

🍚 for the rice 🍚
– 60g brown rice
– 1/2 tin black beans
– 1/2 onion, chopped
– 1/2 red pepper, diced
– 4 cherry tomatoes, chopped
– 1tsp tomato paste
– 400ml veg stock

– fry the onion and red pepper in some oil for 1 min then add in all the other ingredients with some salt and bring to a low simmer for 35mins (same time as the shroooms!) then once most of the liquid has been absorbed, take off the heat and leave for 10 before fluffing with a fork

🥭 mango salsa 🥭
– 1/2 mango, finely diced
– 1/2 avo, diced
– juice of half a lime
– coriander leaves, chopped
– salt
– chilli flakes

– mix it alll up in a bowl and put in the fridge till everything else is ready 💃🏼
