πŸ† baba ganoush pasta πŸ† serves 1
β€’ 100g pasta β€’ 1 large aubergine β€’ 1tbsp tahini β€’ 4 garlic cloves β€’ 1tbsp olive oil β€’ juice of a lemon β€’ 2tbsp pomegranate seeds β€’ 2 tbsp chopped olives β€’ handful of mint β€’

– char the aubergine under the grill at 220 for 40 mins then take out and leave to cool
– put the garlic cloves in a pestle and mortar with 1/4 tsp of salt and mash into a paste then add in the tahini, olive oil and lemon and mush till creamy
– scoop the flesh of the aubergine out and heat in a pan with some olive oil then add in the garlicky tahini mix, lots of pepper and cook over a low heat
– meanwhile, cook your pasta according to pack and reserve a mug full of pasta water and add the pasta to the mix
– add in the olives and 2/3 of the pomegranate seeds
– chop up the mint, adding two thirds to the pasta mixture along with the remaining pasta water and a sprinkling of salt and pepper in order to loosen the sauce slightly, giving it a silky consistency
– serve with some more olive oil and scatter over the remaining pomegranate seeds
