Butternut squash & tofu laksa 🍜 so comforting, autumnal & all one pot 🍂 also if anyone has any butternut squash recs pls lmk as I have so much to use !!

🍜 butternut squash & tofu laksa recipe 🍜 serves 1

• 1 nest rice noodles • 1/4 butternut squash (approx 200g), peeled and cubed • 1/4 block of tofu, cubed • 2 garlic cloves • 150ml coconut milk from a carton (or 100ml can) • 100ml veg stock • 1 red bell pepper • 2tsp soy sauce • 1tsp sriracha • 1/2tsp coriander • 1/2tsp paprika • 1/4tsp turmeric • 1/2 red chilli, chopped • 4spring onions, chopped •

– roast the butternut squash at 180 for 35-40 mins, adding the tofu halfway
– fry the onions, spices, chilli and garlic till fragrant then pop into a blender with half the butternut, the coconut milk & soy (and a pinch of sugar) and blitz
– cook the noodles according to pack
– add your sauce into a pan with the pepper and veg stock and let simmer for 10 mins till soft
– then add in the butternut squash, tofu, noodles and a handful of cashews
– give a stir and serve with remaining spring onions 🌱
