Cashew pesto bake with @snackcheesies crumb 🍝🌱🧀 @snackcheesies is literally baked cheese which can be eaten as a snack or incorporated into a meal 🥘 it adds such flavour to a dish (much more than just using regular cheese!) 🧀 it is suuuper high in protein which is very important as a veggie since with no meat I always try and make sure I keep my protein intake high ⬆️ and this is a deliciooouuus way to do so 😍 (ad-pr sample)

🌱cashew pesto bake 🌱 with @snackcheesies crumb 🧀 serves 2

For the pesto: 50g cashews, soaked in boiling water till soft (approx 30 mins) • 20g pine nuts • 50g basil • 1tbsp olive oil • 70ml soy milk • 2tsp nooch or parmesan • 2 garlic cloves • salt • pepper • juice of 3/4 lemon •

For the pasta: 200g pasta • 200g mushrooms, sliced • 1 red onion, chopped • 200g broccoli • 6 sun dried tomatoes, chopped • 100g frozen peas • 2 x 20g packs (optional) of @snackcheesies •

– blend your pesto ingredients together and set aside 🌱
– meanwhile, fry the onion, mushrooms, tomatoes and broccoli in a pan with some salt and olive oil till soft 🍄
– cook your pasta accordingly and add to the pan with the pesto, peas and 1 pack of @snackcheesies (crumbled), give one big stir and remove from heat 🧀
– transfer to an ovenproof dish and sprinkle over some pine nuts and other pack of @snackcheesies (crumbled) then bake in the oven for 20 mins at 180 degrees 🔥
– remove from oven and serveeee & scatter with some basil leaves 🍁
