CREAMY SWEDISH VEGAN MEATBALLS 🇸🇪 my contribution to the Europe theme of tonight’s 🥳 such a deliciouuus, super easy & speedy recipe and also would work so so well with pasta or rice as it’s like a stroganoff sauce 😋

🇸🇪 CREAMY VEGAN SWEDISH MEATBALLS RECIPE 🇸🇪 serves 2

• 12 vegan meatballs (I used @vegetarianbutcher) • 200ml soy cream (I used @alpro) • 150ml water • 1 stock pot • 150g chestnut mushrooms, finely sliced • 2 garlic cloves, finely chopped • 1 onion, finely chopped • 1-2 tsp Dijon mustard • 1tbsp soy sauce • fresh dill •

– cook the meatballs according to pack
– meanwhile, fry up the onion and garlic in some oil till soft, then add the chestnut mushrooms and stir in the stock pot or cube and the water, stir till dissolved
– now slowly mix in the soy cream, mustard, soy sauce along with plenty of black pepper (and salt if needed but should be salty enough), simmer on a v low till the mushrooms are soft
– now add in the cooked meatballs and stir till coated in the sauce
– simply serve the meatballs on top of pasta, rice or potatoes, spoon over the sauce & scatter over the dill ✨🇸🇪🌾
