Crispy chickpea flatbread with stewed tomatoes, sautéed tofu and chargrilled broccoli in a pesto dressing 🌱😜🌟 first of many yeeeet ✌🏼✌🏼✌🏼 I absolutely love homemade chickpea flatbreads, all you need is some chickpea flour, water and salt and there ya have it 🥞
The deeets:
– for the flatbread, mixed 50g chickpea flour with 80ml water and a pinch of salt, set aside for 10 mins then fried in a pan (like a pancake) till golden and crispy on each side 🌮
– for the tofu, literally coated in one heaped tbsp of pesto and fried 🌱
– for the stewed tomatoes, fried up some garlic in some olive oil and salt flakes, then I added in cherry tomatoes with the oregano and squished with a spoon when soft 🍅
