FESTIVE EATS DAY 1: Brussels sprout Pad Thai πŸ₯’πŸŽ…πŸΌ such an odd sounding combo but sooo good as the chargrilled sprouts in garlic really add to the overall flavour 😍

Serves 1: 150g brussel sprouts β€’ 1/2 block smoked tofu (@tofooco) β€’ 1 clove garlic β€’ 1/2tbsp tamarind paste β€’ 1tbsp soy β€’ 1/2tbsp brown sugar β€’ 1tsp chilli oil β€’ 100g beansprouts β€’ 1/2 lime β€’ 25g salted peanuts, crushed β€’ small bunch of coriander β€’ 1 nest of rice noodles β€’

– trim the stems and halve the brussel sprouts, cube the tofu and finely chop the garlic
– cook your noodles according to pack (do not overcook)
– meanwhile, make your sauce by storing together the tamarind, soy, sugar and chilli oil and set aside
– now heat some oil in a pan and add in your sprouts and pan fry till coloured (about 4-5mins) then add in the garlic and fry for 1 more min
– Scrape the brussels and garlic to one side of the pan. Pour in a splash more oil and add the tofu. Fry for 3 minutes
– Get the pan back on the heat, tip in the drained noodles along with a splash of water. Give everything a good mix, fry for 2 minutes then pour in the sauce. Cook for a further 2 minutes until the noodles are soft enough to eat then add the beansprouts and most of the peanuts to the pan
– Give everything one last toss then dish into a bowl. Top with the remaining peanuts, a squeeze of lime and chopped coriander and enjoy πŸ€ͺ🍜
