FESTIVE EATS DAY 4: Loaded jackfruit ‘turkey’ sandwich with parsnip & beetroot chips 🥪🥯🍟 okay this sandwhich was INSANE – I treated myself (but not my bank account lols) to a fresh bakery sourdough roll, then topped it with homemade chestnut spread, mayo, cranberry sauce, @cauldronfoods sausages & jackfruit ‘turkey’ 🤤
🥪 jackfruit ‘turkey’ sandwich 🥪 makes 1 roll
For the jackfruit: 1/2 tin jackfruit, 1tsp oil, 2tsp chicken seasoning, salt and pepper
For the sandwich: 1 white roll • 1 plant based sausage (I used @cauldronfoods) • 1 heaped tbsp cranberry sauce • 1 tbsp mayo (egg free if vg) • 50g chestnuts • 1tbsp dairy free butter • lettuce •
– make your jackfruit: mix the ingredients together, spread out in a baking tray and roast in the oven at 180 for 40mins (turning halfway)
– meanwhile, cook the sausages according to pack
– make the chestnut purée: blend the chestnuts with the butter and a pinch of salt, it should be crumbly, then place into a bowl and squish down using your hands till it becomes a spreadable like consistency
– Butter the bread roll and Spread an even amount of cranberry sauce onto one half of each roll and even amount of egg free mayo over the other. Spread an equal amount of the chestnut puree onto the other half of the bread roll Put a few lettuce leaves on the bottom of the roll
– Take the sausages out of the oven, cut them into slices and place on top of the lettuc
– Take the jackfruit out of the oven, shred with two forks and place into the rolls
– close and serve with chips 🍟 🥰
