FESTIVE EATS DAY 5: BAKED CHRISTMAS MAC N CHEESE with stuffing crumb & carrot bacon 🎄🥓 what a way to end the week of festive eats cause THIS WAS THE BEST VEGAN MAC N CHEESE YOU WILL EVER EAT 😍😍😍 the stuffing crust and everything just 🤤🤤🤤

🎄CHRISTMAS BAKED MAC N CHEESE with carrot bacon and stuffing crust🎄

For the carrot bacon: 1 carrot, 1tsp soy, 1tsp maple syrup, 1tsp liquid smoke, smoked paprika

Peel the carrot into strips and mix with the other ingredients then bake under the grill for 10-15 mins, set aside

For the stuffing crust: 1 vegan sausage, cooked (I used @cauldronfoods) • 40g chestnuts • 1/2 piece of bread • sprig of thyme • 1/4 red onion • 15g pecans •
– blitz to crumb, set aside

For the pasta bake: 90g pasta • cranberry sauce • 1/2 block silken tofu • 2tbsp nooch • 1/2tsp Dijon mustard • 1 garlic clove •

– cook pasta according to pack and blitz the other ingredients together to a sauce
– drain the pasta, stir through the sauce and season with salt and pepper then stir in the carrot bacon (and some cranberry sauce if u want at this point)
– place all into an ovenproof dish and top with the stuffing
– pop under the grill for 10 mins till the crust goes crisp then serve with the cranberry sauce over top 😍
