‘HEALTHY VEGAN’ MEALS DAY 5: WHITE BEAN RISOTTO 🌼 packing in SO much (approx 3/4) of your five a day & getting alll those complete proteins from the quinoa & also some from the beans 👊🏻 such a student friendly recipe too!

🌼 white bean quinoa risotto recipe 🌼 serves 4

• 340g quinoa • 2 cans of canellini beans, drained • 1 onion, diced • 4 cloves garlic • 900ml veg stock • 300g cauliflower florets • 300g of broccoli or brussel sprouts (or similar) • 100g kale • 100ml almond milk • 2tbsp nooch • juice of a lemon • handful of parsley • pesto • walnuts •

– coat the broccoli and cauliflower in olive oil, salt and pepper and roast in the oven till crispy (approx 30mins at 200)
– meanwhile, fry the onion and garlic in some oil, add the quinoa and one can of the beans, along with 700ml of the veg stock
– blend half the roasted cauliflower with the other can of beans, almond milk, nooch, lemon and 200ml of veg stock, salt, pepper and blend
– pour this mixture into the pan with the quinoa, simmer till it is all absorbed, adding more water if needed
– mix in the kale and the half the broccoli, season with plenty of salt and pepper and simmer till the kale has wilted
– now serve up and top with the roasted broccoli, drizzle over the pesto and sprinkle over the crushed walnuts 🌱🌱
