Isssa vegan MCDONALD’S FAKEAWAY FRIDAY 🍟🤪🤪 fillet ‘no’ fish burger with vegan tartar sauce & some carrot, sweet pot and regular chips (didn’t have enough potato to make a whole dish lol so a combo of all 3 will do) 🍟 okay WTF THIS TASTED EXACTLY LIKE THE REAL THING I was SHAKEN 😱 made the ‘fish’ fillet outta tofu, cashews, chickpeas and nori sheets and it tasted so much like a Reg fish fillet?!? Made the bread buns from scratch too (waste of time will just but next time) 🤭 Also looool at my presentation here it looks like such a bland meal but I promise it was 10000/10 👌🏻👌🏻👌🏻

🍔 vegan fish ‘no’ fillet burger 🍔 serves 1
• 60g firm tofu • 15g soaked cashews • 1/2 sheet nori • 1/4 can of chickpeas • 1/2tsp garlic granules • 1/2tsp salt • flax egg (recipe below) or regular egg if not vegan

For the breadcrumb: 20g panko breadcrumbs • 1/4tsp paprika • 1tsp nutritional yeast • pinch of salt •

– drain and rinse the chickpeas, drain the cashew nuts, press the firm tofu to remove any excess moisture. In a food processor add the chickpeas, tofu, nori, salt and spices and the drained cashew nuts and pulse blend till smooth but that there is a little texture.
– squish and shape into a square piece
– then blitz the breadcrumb mix together, pour into a plate and set aside
– now make up a flax egg by mixing 1tbsp flax seed with 2tbsp water, leave to thicken then stir in 2tbsp oat milk (or other)
– now dip the tofu burger in the ‘egg’ and then roll in the breadcrumb mix on the plate Till fully coated
– now bake in the oven for 10 mins at 200 degrees then fry in the pan with some oil so it gets really golden and crisp
– serve with vegan Tatar sauce (vegan mayo mixed with capers) in a bun 🍟🍔
