Kitchari with homemade flatbreads & avo mint salad ๐Ÿ‡ฎ๐Ÿ‡ณ๐Ÿฅ— going back to my roots on this oneee ๐Ÿคชa delicious one pot dish made up of lentils, basmati rice, veg and spices – high in protein & your five a dayyyy ๐ŸŒŸ

๐Ÿ‡ฎ๐Ÿ‡ณ kitchari recipe ๐Ÿ‡ฎ๐Ÿ‡ณ serves 1 inspired by @wickedhealthy
โ€ข 45g red lentils โ€ข 35g basmati rice โ€ข 1/2 onion, diced โ€ข 1 clove garlic, diced โ€ข 1/2 inch ginger, chopped โ€ข 1/2 head of broccoli or cauliflower โ€ข 1/2 courgette, chopped โ€ข 1/4 tsp turmeric โ€ข 1/4tsp black mustard seeds (opt) โ€ข 1/2 tsp cumin โ€ข 1/2 tsp garam masala โ€ข 500ml veg stock โ€ข 100g peas โ€ข

– fry the spices till the seeds pop then set aside
– fry the onion, garlic, ginger (and chilli for spice) in a heavy based deep sauteฬ pan till soft then add in all your other ingredients (except for the peas and 1/2 the veg stock)
– simmer on a low heat uncovered for 10 then add in the rest of the veg stock and the peas, simmer for a further 15 minutes (adding more water if it absorbs it all – I definitely did!)
– after 15 minutes, is the rice is still not yet fully cooked, add another 100ml water and leave for a further 5/10
– once it seems ready serve with flatbreads, pita, yoghurt or just enjoy on its own ๐Ÿ™‚
