Kitchari with homemade flatbreads & avo mint salad 🇮🇳🥗 going back to my roots on this oneee 🤪a delicious one pot dish made up of lentils, basmati rice, veg and spices – high in protein & your five a dayyyy 🌟

🇮🇳 kitchari recipe 🇮🇳 serves 1 inspired by @wickedhealthy
• 45g red lentils • 35g basmati rice • 1/2 onion, diced • 1 clove garlic, diced • 1/2 inch ginger, chopped • 1/2 head of broccoli or cauliflower • 1/2 courgette, chopped • 1/4 tsp turmeric • 1/4tsp black mustard seeds (opt) • 1/2 tsp cumin • 1/2 tsp garam masala • 500ml veg stock • 100g peas •

– fry the spices till the seeds pop then set aside
– fry the onion, garlic, ginger (and chilli for spice) in a heavy based deep sauté pan till soft then add in all your other ingredients (except for the peas and 1/2 the veg stock)
– simmer on a low heat uncovered for 10 then add in the rest of the veg stock and the peas, simmer for a further 15 minutes (adding more water if it absorbs it all – I definitely did!)
– after 15 minutes, is the rice is still not yet fully cooked, add another 100ml water and leave for a further 5/10
– once it seems ready serve with flatbreads, pita, yoghurt or just enjoy on its own 🙂
