Portobello mushroom steaks with butterbean mash & red cabbage 🍄🍄 this was sooo good & so meaty, adapted from @ottolenghi’s new Flavour book and did not disappoint as per 🤩

🍄 portobello mushrooms steaks 🍄
Serves 2
• 4 portobello mushrooms • 5 garlic cloves, peeled • 1 onion, chopped into wedges • 1tsp chipotle flakes • 1/2 red chilli • 2tsp cumin • 1tsp coriander • 1tbsp tomato paste • 100ml olive oil •

– Put all the ingredients for the steaks and 1 tablespoon of flaked salt into a large ovenproof saucepan with a lid cover with baking paper then Cover with the lid, and transfer to the oven for 1 hour at 150 (fan setting)
– after an hour, turn the mushrooms over, replacing the paper and lid, and return to the oven for 20 minutes
– remove the mushrooms to a chopping board and cut in half
– Use a spoon to remove the onion, garlic and chilli (discarding the stem) and add to a blender till smooth, return this to the pan of sauce with the mushrooms too and simmer for 5 mins
– serve with butter bean mash ~ lit just a can of butterbeans in a food processor with 2tbsp water, 1/4tsp flakes salt and juice of half a lemon 🍋
