PRET KALE & CAULI MAC N CHEESE 🌱 alll vegan as it is in @pret ✨ made using cashews, silken tofu and nooochhh 🤪 I was inspired by @madebyblitz and thought to give my own a go and it was sooo good, all topped with plenty of breadcrumbs n sea salt flakes which really crisp up when you bake it🤩
🧀 PRET KALE N CAULI VEGAN MAC N CHEESE 🧀 serves 4
• 380g dried macaroni • 1.5tsp Dijon mustard (add more if you like it) • 2tsp red miso • 4tbsp nooch • 2 blocks silken tofu • 1clove garlic • 50g cashews, soaked and drained • 200ml almond milk • 100g breadcrumbs (any will do, just blitz up some overcooked toast or use panko) • 1 cauliflower, cut into florets • 200g kale •
– roast your cauli with some olive oil and sea salt flakes in the oven at 180 for 20 mins, adding the kale in for the last 5 mins (it cooks real quick)
– Blend the silken tofu, soaked cashew nuts, almond milk, garlic, Dijon mustard, red miso paste and nooch and blitz
– Cook the pasta and reserve a cupful of water
– Mix with the sauce into the pasta with the cauli and kale, add in half the cup approx of pasta water as the sauce will evaporate quite a bit in the oven
– place in a casserole/ovenproof dish and sprinkle the breadcrumbs and some sea salt (& smoked paprika to make it extra fancy) over the top
– Bake for 5-10mins at 200degreezzz 🔥
– Cut into 4 squares n serve uuuup 😜
