Pulled teriyaki oyster mushrooms with jasmine rice and wok fried broccoli 🍄🍙🥢 made the pulled ‘chicken’ from oyster mushrooms which is one of my faaave plant based alternatives as it is so meaty and rich😍

🥢pulled ‘chicken’ teriyaki 🥢 serves 1
• 3 king oyster mushrooms • 3tbsp teriyaki sauce • 1/2 bell pepper • 1/2 chilli, finely chopped • 1 garlic clove, chopped • handful peanuts • 3 spring onions, chopped •

– for the ‘chicken’: pull apart the mushroom using two forks and coat in 1 tbsp teriyaki sauce then spread out on a tray and place in the oven at 180 for 20mins
– meanwhile, fry your garlic, chilli and onion in a pan till soft then add in the peppers for 5 more minutes
– add the mushrooms and peanuts into the pan then coat it all in 2 tbsp teriyaki sauce (adding more if needed)
– simmer for 2 minutes then serve with sesame seeds 😜
