Pulled teriyaki oyster mushrooms with jasmine rice and wok fried broccoli ššš„¢ made the pulled āchickenā from oyster mushrooms which is one of my faaave plant based alternatives as it is so meaty and richš
š„¢pulled āchickenā teriyaki š„¢ serves 1
⢠3 king oyster mushrooms ⢠3tbsp teriyaki sauce ⢠1/2 bell pepper ⢠1/2 chilli, finely chopped ⢠1 garlic clove, chopped ⢠handful peanuts ⢠3 spring onions, chopped ā¢
– for the āchickenā: pull apart the mushroom using two forks and coat in 1 tbsp teriyaki sauce then spread out on a tray and place in the oven at 180 for 20mins
– meanwhile, fry your garlic, chilli and onion in a pan till soft then add in the peppers for 5 more minutes
– add the mushrooms and peanuts into the pan then coat it all in 2 tbsp teriyaki sauce (adding more if needed)
– simmer for 2 minutes then serve with sesame seeds š
