Pumpkin Alfredo 🍝🎃 what to do with your leftover halloween pumpkin? I got you covered 😎 this is the PERFECT autumnal dish, using up those in season vegggieees 🌱 and it is so rich, creamy and would ya believe it VEGAN !! 💥

🎃 Pumpkin Alfredo recipe 🎃 serves 1
• 90g pasta • 300g pumpkin, de-seeded, peeled and cubed • 1 leek, sliced • 15g cashews • 2 garlic cloves • 75ml soya milk • 1tsp nooch or Parmesan • 50g unsweetened yoghurt • 1tbsp sunflower seeds • handful of basil leaves (opt) • peas (opt) •

– Coat your pumpkin chunks in some olive oil, salt and pepper then add to a roasting pan with the unpeeled garlic cloves and cook at 180 for 35- 40mins
– once the pumpkin is soft, add 2/3 to a blender with the garlic cloves (UNPEELED NOW), soya milk, nooch and cashews with salt and pepper and blitzzzz in a blender
– meanwhile, cook your pasta and in a separate pan fry your leeks and 1 chopped garlic clove in some oil with some salt and pepper
– once soft, add in the pumpkin purée and yoghurt and give a stir with a dash of pasta water
– drain your pasta (RESERVING APPROX 100ml of liquid) and add to the pan, adding more pasta water to make more sauce
– stir through some peas and basil and season with salt and peppeeer
– serve with roasted sunflower seeds 🌻🎃
