SINGAPORE ‘MEI FUN’ NOODLES 🍜🇸🇬 wanted a quick and easy dish to make and this hit the spoooot 🌱 you can use any protein in sub for the tofu !!

🇸🇬 Singapore noodle recipe 🇸🇬
• nest of vermicelli noodles • 1/2 block of tofu, cut into triangles • 2 eggs (leave out if vegan) • 150g beansprouts • 1 pepper • 1/2 red onion • 2 garlic cloves • spring onion • 1/2tbsp curry powder

SAUCE: whisk together 1/2tbsp oyster sauce, 1/2tbsp soy sauce, tsp sesame oil, 1/2tsp mirin, 1/2tsp sugar and juice of half a lime

– fry the tofu and set aside
– prep the noodles According to pack
– now make an omelette with one of the eggs, cut into shreds and set aside
– fry 1tbsp oil in a pan, add in the garlic and curry powder for 20secs then add in the cooked noodles
– mix altogether then add in the veg and cook till they are slightly soft but still have a crunch
– add in the spring onions, egg strips and the other egg and scramble into the noodles for 3 mins
– add in the sauce and stir altogether, cooking for 1 more min on a low heat, then serve with the fried tofu 🍜
