Slow cooked cherry tomato & aubergine gnocchi with homemade herby pesto 🌱 coming at uuu with a @mobkitchen special 🤪so simple, easy and cheap 🄰

🌱 cherry tomato gnocchi recipe 🌱 serves 2
• 400g gnocchi • 300g cherry tomatoes • 1tbsp olive oil • handful of basil leaves • half an aubergine, in chunks • 1tsp red wine vinegar • 2 garlic cloves •

ā­ļø for the pesto blitz 50g toasted nuts (pref walnuts) with some love oil, bunch of basil, mint, chives, salt and pepper ā­ļø

– heat the oil in a pan, add the tomatoes with some salt and pepper and lightly mush with a spoon
– add in the garlic, basil, aubergine, red wine vinegar and some chilli flakes with 50ml water and leave to simmer on low for 10 mins
– meanwhile, cook your gnocchi according to pack and reserve some water
– add gnocchi to pan with tomatoes, lightly stir, season with salt and pepper and add in some reserved water if a bit dry
– top with the delish pesto and serve with a crunchy salad 🄬
