Slow cooked cherry tomato & aubergine gnocchi with homemade herby pesto š± coming at uuu with a @mobkitchen special š¤Ŗso simple, easy and cheap š„°
š± cherry tomato gnocchi recipe š± serves 2
⢠400g gnocchi ⢠300g cherry tomatoes ⢠1tbsp olive oil ⢠handful of basil leaves ⢠half an aubergine, in chunks ⢠1tsp red wine vinegar ⢠2 garlic cloves ā¢
āļø for the pesto blitz 50g toasted nuts (pref walnuts) with some love oil, bunch of basil, mint, chives, salt and pepper āļø
– heat the oil in a pan, add the tomatoes with some salt and pepper and lightly mush with a spoon
– add in the garlic, basil, aubergine, red wine vinegar and some chilli flakes with 50ml water and leave to simmer on low for 10 mins
– meanwhile, cook your gnocchi according to pack and reserve some water
– add gnocchi to pan with tomatoes, lightly stir, season with salt and pepper and add in some reserved water if a bit dry
– top with the delish pesto and serve with a crunchy salad š„¬
