Spicy stuffed aubergine with pickled rice noodle salad 🍆🍜 this absolutely BANGED the salad was so fresh and super easy to make up (especially since you can make the sauce in advance!) and complimented the aubergines extremely well 🍆 the aubergines were made from my new @bosh.tv book using just harissa, @vivavivera mince and drizzling it with lots of tahini and toppings 😍 swipe for the ultimate close up 😜

🥢 pickled rice noodle salad recipe 🥢 serves 4 as a side
• 55ml cider vinegar • 30g caster sugar • 1 red onion, finely sliced • 5cm piece of ginger, peeled and julienned • 200g flat rice noodles, broken into 15cm pieces • 1tbsp sesame oil • 1tbsp olive oil • 1 Granny Smith apple, sliced into thin wedges • 1 laarge cucumber, sliced into thin strips • 1 red chilli, julienned • 15g mint leaves • 10g coriander leaves • 1tbsp sesame seeds •

– whisk together the vinegar and sugar until sugar dissolves then add in the onion and ginger and stir to coat then set aside for 40mins, stirring occasionally
– cook the noodles according to pack them drain and set aside, mix with the sesame oil and leave to cool
– add the rest of the ingredients to the noodles along with the pickled onion, ginger and juices along with the olive oil and 1.5tsps of salt
– mix together well and serve 🥢
