Sweet and sticky aubergine with udon noodles 🍆🍜 inspo here coming again from the wonderful @sassinabellina 🤩 such a quick, cheap and healthy dish 🥢

🍆 sweet and sticky aubergine recipe 🍆 serves 1
• 1 aubergine • 1/2 lime, juiced • 1tbsp soy • 1tsp rice wine vinegar • 1tbsp maple syrup or agave • 1 garlic clove, crushed • 1cm ginger, chopped • 1/2 red chilli, chopped • 1tsp cornstarch mixed with 1tbsp water •

– cube the aubergine, toss with some olive oil, salt and pepper and roast for 30 mins till soft
– meanwhile, fry the garlic, ginger, chilli in some sesame oil then lower the heat and add the other ingredients (except for cornstarch) with 2tbsp water – simmer for two minutes
– add in the cornstarch slurry and stir till thick, add your aubergine cubes so that’s they are coated in the sauce
– serve with roasted peanuts or sesame seeds 🥢
