TERIYAKI GLAZED ‘MEATBALLS’ WITH MANGO NOODLE SALAD 🥢 honestly so so good and so easy, alll super fresh too 😍 HIGHLY recommend making the teriyaki sauce from scratch (recipe below) & you can lit use any vegan meatballs you fancyyy 💫 could also just serve over plain rice or noodles to make easier 🔥🔥
🧆 teriyaki glazed meatballs 🧆 serves 2
• 12-16 vegan meatballs (I used @nakedgloryuk) • 30ml soy sauce • 1tbsp hoisin sauce • 25g sugar • 60ml water • 10g cornstarch • 1 garlic clove, crushed • chilli flakes • juice of half a lime • 1 red pepper, diced •
– cook the meatballs in the oven according to pack
– whisk together the water and cornstarch, then mix in the soy sauce, sugar, hoisin sauce, lime juice, garlic cloves and chilli flakes
– fry the red pepper till soft, bring to a low heat then add in the teriyaki sauce and stir till it starts to thicken, add in cooked meatballs and toss to coat
🍜 for the noodles:
• 2 noodle nests • 1 mango, diced • 25g fresh basil or coriander • 1 cucumber, chopped into thin strips • 25g peanuts •
For the noodle salad dressing: whisk together 2tbsp peanut butter, 1tbsp sesame oil, 2tbsp soy sauce, juice of half a lime
– cook 2 noodle nests according to pack, drain and rinse under cold water then add to a bowl with the mango, cucumber, fresh herbs and peanuts then mix with the dressing and serve with the meatballs 🧆🧆
