TUNISIAN TAGINE 🇹🇳 with a green harissa sauce 🌱 I got the base of this recipe from a family friend from Tunisia who actually said this dish was called Shaksuka (which translates in Arabic roughly to “all mixed up”) in their country but to keep it simple I thought I’d call it a Tunisian tagine so not to confuse 😅 anyways this was so so good and is my contribution to the 🌎

🇹🇳 Tunisian tagine (shakshuka) recipe 🇹🇳 serves 4

2 cans of chickpeas, drained • 1/2 butternut squash, peeled and cubes • 2 sweet potatoes, peeled and cubed • 3 carrots, cut into cm diagonal slices • 5 garlic cloves, diced • 1 inch ginger, grated • 1 large onion, diced • tsp cumin• tsp coriander • 1/2 tsp ground tuermeric ¾ teaspoon cinnamon • ½ tsp caraway seeds • 1 tsp sugar • 1tsp salt • 1tbsp harissa paste • 1 can diced tomatoes ( fire-roasted if possible) • 500ml veg stock • 200g dry cous cous • bunch of mint, chopped •

* For the green harissa sauce: blend 250ml yoghurt (I used @alpro plain) with 2 garlic cloves, salt, 1/2tsp paprika, tsp paprika and a whole bunch of parsley and 1 green chilli / jalapeño till smooth, set aside
* Fry the onion, carrot, garlic, ginger in a pan till soft, then add in the spices and cook for 1 min more
* then add in the chickpeas, butternut squash, sweet pot and mix in along with the harissa paste and season
* Add in the veg stock, tomatoes, salt and sugar and bring to a simmer, sprinkle in the cous cous and mint, stir and pop in the oven at 170 for 10-15 mins (till all liquid has been absorbed)
* Take out and drizzle with the green harissa sauce and sprinkle over flaked almonds 🥰
