VEGAN CARIBBEAN FEAST 🌱🇯🇲 fried plantain, jerk lentils, jackfruit and black bean stew, mango salsa & sautéed callaloo 🥑🥭🍌 honestly have been wanting to cook plantain for months now & I managed to get my hands on some !! It’s so delish, like a savoury banana & can’t wait to explore some more recipes with it !! 🍌

🇯🇲 Jerk lentils recipe 🇯🇲 Serves 1
• 60g green lentils • 100g chopped tomatoes • 1tsp jerk seasoning (or half for less spices) • 200ml veg stock • 1 garlic clove • 1/2 red onion, sliced •

– sauté the onion and chopped garlic in a pan with some oil then add in the jerk seasoning, spring onions, lentils and tomatoes
– give a good mix then add in the veg stock and simmer till cooked (about 20mins)

🌱 jackfruit black bean stew recipe 🌱
Serves 2
• 1 can black beans • 200ml veg stock • 3 large tomatoes, finely chopped • 4 garlic cloves • 3 spring onions • 1 can jackfruit • 1tsp miso paste • 1tsp maple syrup • 50ml bbq sauce • 1 bell pepper • 1.5tsp smoked paprika •

– fry the chopped onion and garlic in the pan, add in the paprika, bell pepper, black beans, maple syrup, miso and half the bbq sauce
– when soft, add in the jackfruit and veg stock, season and let the stock bubble off
– cook for about 15/20 mins on a simmer, stir through remaining bbq sauce and serve 🥰
