VEGAN CHICK*N CAESAR SALAD 🥗 with chickpea croutons & cashew parmesan 🧀 okkk if you are to try any vegan salad it has to be this one 🤤 srsly the best dressing recipe I’ve made & it literally TASTES like parmesan 🧀 alsoo super high in plant-based protein 💪🏼

🥗 VEGAN CAESAR SALAD 🥗 serves 1
• 150g vegan chicken pieces (I used @vegetarianbutcher what the cluck) • 1tbsp pesto • 140g drained chickpeas • 1/4 cucumber, sliced into moons • 100g kale • 50g lettuce • handful of tomatoes •

For the dressing: 160g silken tofu • 1 garlic clove • 1/2tsp oregano • 1tsp capers • 1 good tsp miso paste • salt and pepper • 1 heaped tsp nooch •

– for the ‘chickpea croutons’: toss chickpeas in paprika and salt and toast for 20mins at 180
– toss ‘chicken’ in the pesto with some salt and pepper, then fry in a pan with some oil according to pack
– once cooked, add in the kale so it wilts slightly for about 1 min, set aside
– now whizz you all the dressing ingredients in a blender, add to the kale and chicken and stir through the lettuce, cucumber and tomatoes
– season and mix well then serve in a bowl topped with the chickpea croutons 🥗 I also served mine with some @pimp.my.salad cashew parmesan 😋
