VEGAN CHICK’N FAJITA PASTA 🍝🌶 a super high protein vegan pasta with a sauce made from scratch but lit takes 15mins !!! So delish I used @eat_oumph kebab chicken pieces which I’m a BIG fan off (and I normally hate fake chicken!!) ✌🏼

🍝 CHICK’N FAJITA PASTA RECIPE 🍝 serves 1
• 1 red bell pepper • 1/2 a red chilli • 1/2 red onion • 100g fake chicken pieces • 100g pasta • 150g silken tofu • 1tbsp nooch • 2 garlic cloves • 1tsp tomato paste • oregano • paprika • cumin •

– slice up the pepper, chilli and onion and fry in a pan with some olive oil
– add in one of the crushed garlic cloves along with some salt, 1/4 tsp of each paprika, oregano and cumin
– now add in the fake chicken and fry according to pack
– meanwhile, get your pasta on and reserve half a mug of pasta water when draining
– make your sauce: blitz the nooch, other garlic clove, tomato paste and silken tofu in a blender, set aside
– pour a splash of pasta water into the CHICK’N pan then simmer for 1 min and add in the pasta, along with the creamy sauce
– season and squeeze in the juice of 1/4 lime, also chuck in some peas too if you fancy and add more pasta water to loosen the sauce 😍
– serve with some parslleeey and chilli flakes 🌶
