VEGAN CHRISTMAS CANAPÉS: mini mushroom wellingtons and ‘pigs in blankets’🎄🎅🏼 🥂☃️ the mushrooms are covered in a chestnut mince and then wrapped & baked in filo pastry and tasted sooo meaty 😍 and for the pigs in blankets i wrapped carrots in slow marinated aubergine strips which tasted like smoked pork! Overall a huuuge hit 🎊🎊 also dm me for ‘pigs in blankets’ recipe !! As a lot to put down below otherwise

🍄 mushroom wellington recipe 🍄 makes 4
• 4 large chestnut mushrooms • small red onion • 2 garlic cloves • 150g chestnut mushrooms • 3 sprigs fresh thyme • 30ml white wine • 80g vacuum packed pre cooked chestnuts (used @merchantgourmet) • 50g pecans • slice of wholemeal bread • 4 sheets vegan filo pastry • salt and pepper •

– rub the 4 large chestnut mushrooms in olive oil and garlic and place in the oven for 10 mins till soft
– make your mince: blitz the mushrooms, garlic, onion in a food processor till smooth, set aside
– make the breadcrumbs by blitzing the chestnuts, bread and pecans together and set aside
– If the onion and mushroom mixture has released excess juice, drain quickly in a sieve. Add the mixture to a pan with some oil and a pinch of salt and stir for 4-5 minutes. Add the thyme and rosemary and stir for 1 minute. Add the white wine to the pan and stir for 3-4 minutes. Take the pan off the heat and stir through the breadcrumb mix
– Cut your pastry sheets in half so you have 8 squares. Lay the sheets out so they are overlapping at different angles to form stars. Place a ball of filling in the centre of each and pop the mushroom on top of the mix
-Take another piece of the filling, roll it into a ball and flatten it out into a 1cm thick disc between your hands. Place the disc of filling on top of the mushroom, mould the 2 pieces of filling around the mushroom to form a ball, ensuring the edges are sealed. I then popped a dollop of vegan cream cheese at the top here
– Pull the exposed sheets of filo pastry up around the ball and twist the tops together
– bake in the oven at 180degrees for 20 mins till nice and crisp 🎅🏼🎅🏼
