VEGAN KALE CAESAR SALAD 🥗🌱 this was soooooo delicious and the dressing literally tasted exactly like normal Caesar (minus the gross anchovy taste so actually even BETTER) 😍 protein PACKED & so quick taking only 15mins to whip up! I used @lindamccartneyfoods chorizo sausage as a sub for bacon but you can use any alternative here !! And some chicken flavoured mushrooms alll revealed on how to make below 😜 & don’t skimp on the dresssing (it’s the best part)

🥗 VEGAN KALE CAESAR SALAD 🥗 serves 1

For the dressing: • 30g cashews • 15g sunflower seeds • 70ml soya milk (or alt) • 1 heaped tsp nooch • 1 garlic clove • small squeeze of lemon •

For the salad: 15g sunflower seeds, roasted • 100g kale • 1tsp apple cider vinegar • 1/4 cucumber • 1 @lindamccartneyfoods sausage or alternative (this is your ‘bacon’) • 150g chestnut mushrooms, finely chopped • 1tsp chicken seasoning or smoked paprika • 1 piece of rye bread, cut into croutons (or roasted chickpeas) • 1/2 an avocado •

– blitz up your dressing in a nutribullet and set aside
– massage the apple cider vinegar with a tsp olive oil and some salt into your kale, set aside
– cook your ‘bacon’ 🥓 according to pack and make your roasted croutons or chickpeas by tossing in some oil with salt and cumin, then cooking in the oven at 180 for 15 minutes
– make your ‘chicken’ 🐓 fry up your mushrooms with the seasoning, chilli flakes and salt till browned, set aside
– massage the salad dressing into the kale and add in all the other veggies, your chopped up bacon bits, mushrooms, croutons or chickpeas and toasted seeds
– give a good stir and voila 🌱😎
