VEGAN MAC N CHEESE with candied pecan ‘bacon’ and pulled ‘pork’ 🍟🍝🥓🧀
This was insaaane who knew Mac n cheese could be so good without the cheese but with tofu in its place 😈 took inspo for this from @madebyblitz and combined it with the addition of the pulled pork 😍 alll planet based with the ‘pork’ using pulled oyster mushrooms & paprika and the bacon out of roasted pecans 🤤
🧀 VEGAN MAC N CHEESE WITH pulled ‘pork’ and ‘bacon’ 🧀 serves 2
For the Mac n cheese sauce: 300g silken tofu • 1 roasted garlic clove • 1tsp Dijon mustard • 1tsp white miso paste • 5tbsp nooch • salt • pepper •
For the ‘bacon’: 50g pecans • 2tsp maple syrup • 1tsp soy sauce •
For the pulled ‘pork’: 2 king oyster mushrooms, pulled apart with forks • 1tsp paprika • 1tsp olive oil • 1tbsp bbq sauce (opt) •
For the pasta: 180g pasta • 300g chestnut mushrooms • 100g spinach •
– make your ‘pork’: miz your mushroom shreds with the paprika, salt and oil then spread on a tray and bake at 180 for 30mins, take out and stir through the bbq sauce
– blitz up your sauce ingredients in a blender and set aside
– make your ‘bacon’: mix all bacon ingredients together and bake in the oven at 180 for 8 mins
– meanwhile, cook your pasta according to pack
– fry up the sliced chestnut mushrooms with a chopped garlic clove and some salt, then add in the pasta, half the ‘pork’ and spinach and give a good stir then place under the grill for 5 minutes
– top with your pecan ‘bacon’ bits and pulled ‘pork’ and enjoy 🤤🤤
