VEGAN NANDOS FAKEAWAY 🍟🌶🌱🐓 drumrollll pleeeeaseee here we got the slaw, mushy peas, piri piri chips & Nando’s style ‘chicken’ 🐓this absolutely hit a spottttt 🤤🤤🤤 and how have I never made homemade chips before ?!? Never buying them frozen again these were so crisp and yummmy 😍
🌶 VEGAN NANDOS RECIPE 🌶
🐓 For the @nandosuk ‘chicken’: 100g fake chicken (I used @eat_oumph pieces, but you could also sub in chickpeas, jackfruit or any protein source) • 1 pepper • 1 beef tomato • 1/2 a chilli • 1/2 a red onion • 2 garlic cloves • 30g vegan cream cheese (I used @nushfoods)
– roast the pepper, garlic, onion, chilli and tomato till caramelised then whack in a blender with the cream cheese, some salt and paprika
– fry your chicken till golden then bang in half the sauce (mix the other half with vegan mayo to make sauce for the chips !!) and mix all together
🍟 FOR THE CHIPS: 200g baking potato, sliced into chunks • 1/4tsp paprika • chilli flakes • salt • pepper • peri salt if you have it (I didn’t) • 1tbsp oil •
– parboil the potato chunks for 10 mins then drain and mix gently with the other ingredients and pop in the oven for 25 mins till gold and crispy
– top with more salt and paprika 🌶
🌱 FOR THE MUSHY PEAS:
• 75g peas • 1tsp olive oil • salt • mint • parsley • 1 garlic clove • chilli flakes •
– fry the garlic and chilli flakes till fragrant in the oil then add in the peas, salt and herbs 🌿
– cook for 2 mins then mash with a potato masher to desired consistency
🥗 SLAW DRESSING: 25g soaked cashews, 2tsp apple cider vinegar • 1tsp agave • 1/2 tsp Dijon mustard •
– blend and stir through the carrots, cabbage and lettuce
