VEGAN NO BEEF WELLINGTON 🎄✨ with cauliflower mash, roasted broccoli and onion gravy 🥦 what a PENG way to start Christmas like I’m sorry it even LOOKS like rare beef !!?! (All thanks to the grated beetroot hehe) and everyone went wilddd for this one 😏 would be a great dinner party ting ! it works so well with mashed cauliflower as makes it not too heavy !!

✨ VEGAN NO BEEF WELLINGTON ✨ serves 4-5 (thx @mobkitchen for ur help)
• 4 vegan burgers (I used @meatlessfarm) • 1tbsp paprika • 1 cooked beetroot • 1 carrot • 2 sticks celery • 2 garlic cloves • 1 onion • 500g chestnut mushrooms • 3 bay leaves • 2 sprigs of thyme • 1 pack of puff pastry •
– dice the onion and celery and grate the carrot then fry in some oil till soft, then add in the garlic cloves (crushed) and the leaves of one of the sprigs, cook for one more min
– add this mix into a bowl along with the burgers, paprika, grated beetroot and plenty of salt and pepper – get yo hands in and mixxxx
– mould into a cylindrical shape, wrap in cling film and put in the fridge for 30mins (the longer the better)
– make the mushroom layer now by really finely chopping up the mushrooms and frying for 10 mins with the thyme and bay leaves then add in the white wine and season then simmer for a further 10 mins till all absorbed
– Assemble the wellington: take your pastry out of the fridge (make sure it’s cold!!!) and unroll it, then slice out a large enough piece to act as a base for the wellington and place it on a large baking tray. Place the cylinder of ‘beef’ on top and then smear the mushroom mix all over. Slice strips of pastry and plait it over the wellington filling.
– Pop the wellington in the oven at 200 for 30-35mins then serve that baby uuuup with plenty of onion gravy and whatever sides 🤩🤩 MERRY CHRISTMAS EVE!!!! 🎄
