VEGAN ‘SMOKED SALMON’ BRUNCH BOWL 🌱🥑🌻🌈 but for lunch hehe cause why have one meal when you can have two 😈 the ‘smoked salmon’ is made out of marinating strips of roasted carrot (go see my friend @chefbrux who does a fab reel on this which is what I followed !!) 🥕🤩

Brunch bowl deeeets:
– scrambled silken tofu (recipe below) 🍳
– portobello mushroom grilled with pesto 🍄
– avocado chunks tossed with cherry tomatoes, garlic and olive oil 🥑
– homemade vegan ‘smoked salmon’ 🥕
– sautéed spinach and kale 🥬
– courgette flatbreads (recipe on previous posts just with 1/4 grated courgette added) 🌯

🍳 scrambled silken tofu recipe 🍳
• 200g silken tofu (I used @clearspring) • 1/4 tsp turmeric • salt (black salt if you have it) • pepper • chilli flakes •

– pat the tofu dry then add to a warm frying pan & mash with a fork, add in the other ingredients, heat and stir through then serve !!
