VEGAN WELSH RAREBIT 🧀🍞🌱 such a good lunch to spice things up and proves vegan does not equal boring salads !! So I’m veganising an all time CLASSIC here that can be whipped up in 15mins 😈 so creamy & comforting (and also sooo delish on my high protein lentil bread which I posted yesterday!) 😋

🧀 vegan Welsh rarebit recipe 🧀 serves 1
• 2 small pieces of bread • 100ml oat milk • 10g plain flour • 35g @followyourheartuk smoked vegan cheese (I just used slices) • 1/4tsp dijon mustard • 10g vegan butter or spread • 1 leek • optional: 1/2tsp vegan worchestire sauce or Henderson relish •

– make the roux: simply melt the spread in a small saucepan and whisk in the flour, cheese, mustard, oat milk and worchestire sauce if using then season and set aside when smooth (add more oat milk if you want it less thick)
– meanwhile, lightly toast the bread and also fry the leek in a small bit of oil or butter with salt and pepper
– now time to load up: place the leeks on top of the bread and pour the rarebit sauce over top
– pop under the grill for 3-5 mins till it browns slightly
– take out and serve with a sprinkle of paprika & some parsley 🧀🌱😜
