VEGANUARY ‘EASY VEGAN’ MEALS DAY 1: PAD SEE EW 🥢🇹🇭 now this one is one pot, quick AND cheap so a reaaaal 3 in 1 😜 a dish I was OBSESSED with when I travelled in Thailand I literally think I ate it once a day 😂 so of course had to recreate it 😈
🇹🇭 PAD SEE EW 🇹🇭 serves 1
• 2 garlic cloves, chopped • 1/2 block of smoked or regular tofu (I used @tofooco smoked) , chopped into cubes • 150g broccoli • 150g beansprouts • 1 rice noodle nest •
For the sauce: whisk together 1tbsp vegan oyster or hoisin sauce, 1tbsp soy sauce, 1tbsp water, 1tsp brown sugar, (1tsp sriracha, optional)
– cook noodles according to pack
– fry the tofu in oil in a wok till crispy
– add the garlic then add in the veg with a dash of soy and cook till soft
– add in the noodles & sauce and mix
– garnish with peanuts & lime 🥜
