VEGANUARY ‘EASY VEGAN’ MEALS DAY 2: COCONUT & BUTTERBEAN RISOTTO 🥥 literally SO CHEAP, such few ingredients and alll one pot! 🌟 so nutritious too filled with allll the good stuff 🌱 sounds like a weird combo but absolutely INSANE and SO creamy as coconut milk is a cream replacement here 😍
🥥 COCONUT & BUTTERBEAN RISOTTO 🥥 serves 2
• 1 tin butterbeans • 4 garlic cloves • 200g cherry tomatoes • 175g risotto rice • can of coconut milk • 400ml veg stock • 200g leafy greens (spinach or kale) •
– simply just chop up the garlic and fry in some olive oil with the tomatoes, butterbeans, salt and pepper (and chilli flakes if ya want!)
– add the rice in along with the coconut milk, stir and simmer for 10 mins
– now add in the veg stock, season and simmer and stir till the rice is fully cooked (add more water if needs more)
– stir through the greens, cook till they’ve wilted then serve 🥰
