VEGANUARY ‘EASY VEGAN’ MEALS DAY 3: THAI BASIL MINCE 🇹🇭 SO cheap, SO easy and SO delicious 🤤 served on a bed of sticky rice and with a Thai mango salad 🥭
🌶 THAI BASIL MINCE RECIPE 🌶 serves 4
• 400g vegan mince (I used @vegetarianbutcher) • 8 garlic cloves, chopped • 1 red chilli, chopped • 200g shiitake mushrooms, diced • bunch of spring onions, chopped • 6tbsp soy sauce • 1tbsp maple syrup or sugar • 1 pack of Thai basil leaves (the more the better – can sub for coriander) •
– add the onions, chilli and garlic to a pan in sesame oil, fry for 1 min then add mushrooms, fry till soft
– crumble in your mince and add the soy, Thai basil leaves and sweetener
– simmer for 10-15 mins (add in about 100ml water to make more saucey)
– serve over sticky rice with spring onions and peanuts 🥜
