VEGANUARY ‘EASY VEGAN’ MEALS DAY 4: LENTIL RAGU 🍝 this was soo soo yummy and rich & honestly is SO cheap 😍 can’t believe I’ve never made this before & I definitely will be making again 😏 would be such a good one to batch make and have the leftovers on jacket potatoes or even mixed in a salad! 🥗

🍝 LENTIL RAGU 🍝 serves 2

• 75g dry puy or green lentils • 1tbsp tomato puree • 1 carrot, chopped • 1 onion, diced • 1 courgette, cubed • can chopped tomatoes • 350ml veg stock • 200g mushrooms (shiitake or chestnut), very finely chopped • 3 bay leaves • 3 garlic cloves, crushed • 1tbsp tomato purée • 1tsp smoked paprika • 1tsp dried oregano or mixed herbs • 1tsp miso paste or soy sauce • pack of basil •

– start by frying the onion, carrot, courgette and garlic in some oil and salt till soft
– add all the other remaining ingredients and simmer on low for 30 mins, stirring frequently so it doesn’t stick
– meanwhile, cook pasta according to pack (I used 180g for 2 people), reserve a lol but of water
– once the lentils have absorbed all the liquid, add in the pasta (and a little bit of pasta water if needed)
– season and serve with plenty of noooch and more basil 🤤

** can sub dry lentils for canned lentils just omit the veg stock **
