VEGANUARY ‘EASY VEGAN’ MEALS DAY 5: CHICK’N BIRYANI 🇮🇳 topped with cucumber raita 🥒 going back to my Indian roots here 🥰 alll one pot & so cheap (could also be made just using store cupboard ingredients!) 💫 I used @vegetarianbutcher chicken pieces but you could sub for chickpeas or tofu for a cheaper version 🍴

🇮🇳 EASY BIRYANI RECIPE 🇮🇳 serves 4

• 250g dry basmati rice • 50g dry green lentils (or just use more rice) • 1 onion, chopped • 4 tomatoes, diced • 4 garlic cloves, chopped • 1 cauliflower or broccoli head • 200g peas • 400g vegan chicken pieces / tofu / 2 cans of chickpeas • 5tbsp curry paste • 1tbsp garam masala • 750ml veg stock • 1 bunch of coriander •

– fry the onion, garlic and curry paste in some oil till fragrant, then add in the allll the other ingredients, bring to a boil and simmer for 30mins
– once the rice has absorbed all the liquid (add more and simmer if not fully cooked), serve with some yog, flaked almonds and more coriander 😋
