VEGANUARY FAKEAWAY MEALS DAY 2: MEXICAN BURRITO BOWLS 🌯🥑🇲🇽 so freshhh & the flavours goin on here were insaaane 🙌🏼 black-bean rice, pico di gallo, refried bean chilli, roasted peppers & smashed avocado 🥑 also packed with all that plant-based protein which we always love to see ✨

🌯 MEXICAN BURRITO BOWL 🌯 serves 1

For the refried bean chilli 🌶 fry 1/2 a can of black beans in 1tbsp oil with 1 chopped garlic clove and 1/4 chopped white onion till soft, add in 100ml of veg stock and 1/4 tin chopped tomatoes then mash 🍅 add in 50g vegan mince (I used vivaera, or alternatively just use the rest of the can of beans) with 1/2tsp fajita seasoning or paprika then season and simmer for 15mins then serve 🌯

For the avo 🥑 mash 1 small avo with a tbsp yoghurt, chopped coriander, salt, pepper and lime juice 🍋

For the rice 🍚 cook 60g basmati rice according to pack along with a handful of sweetcorn, 1/2tsp cumin, 1 tsp tomato purée and 1/2 a can of black beans 🥫 once it’s cooked, stir through some small chunks of mango and a squeeze of lime

Pico di gallo 🍅 dice 2 tomatoes and mix with lime juice, chopped coriander plenty of salt, 1/4 diced red onion & chilli 🌶

Then serve all this with some chopped lettuce & roasted peppers 💃🏼
