VEGANUARY FAKEAWAY MEALS DAY 3: TANTANMEN RAMEN WITH BRAISED ‘PORK’ 🍜🇯🇵 it wouldn’t be a fake-away week without ramen & the BEST ramen I have made yet 😜 made the braised ‘pork’ out of tempeh which was riskaaay as normally I HATE tempeh but OH I LOVED THIS !! So if you’re not a fan of tempeh I highly recommend you try this recipe, will 1000% make again 🙌🏼

For the braised ‘pork’:
1 block tempeh, or firm tofu (200g), crumbled • 10g dried shiitake mushrooms, or fresh • 150ml boiling water • 2tbsp black bean or spicy bean paste • 3 garlic cloves minced • 1tsp chopped ginger • 1 star anise • chilli flakes • 4tbsp soy sauce • 2tbsp mirin •

💫boil the crumbled tempeh in water (gets rid of the aftertaste) for 10 mins then drain
💫Soak mushrooms in the boiling water
💫Fry black bean paste with the chopped mushrooms, garlic, chilli flakes and ginger then add in the tempeh and cook for 2 mins
💫Add the mushroom water, the mirin, soy and star anise and leave to simmer on low for 10-15 mins so it becomes braised ✨

For the tantanmen ramen:
Spring green onions, chopped • 1 garlic clove • 2tbsp peanut butter • 1tbsp tahini • tbsp sesame oil • tsp sriracha • 1tbsp soy sauce • 250ml oat or soy milk • 400ml veg stock • 2 heads pak choi • handful of mushrooms • 2 noodle nests •

💫fry onions and garlic in sesame oil till soft, add in the peanut butter, tahini, soy and sriracha, pour in the veg stock and milk, simmer for 10mins
💫After 10 mins, add the pak choi (or broccoli) and mushrooms and simmer for 5 mins more
💫Cook noodles according to pack
💫place noodles in the bowl, fish out your veggies to place on top, pour over the ramen base and then place your braised ‘pork’ on top
💫Serve with sesame seeds and peanuts sprinkled over ✨
