VEGANUARY IMITATION MEAT WEEK DAY 2: ‘CRAB’ CAKES 🦀 topped with sriracha mayo 🥢 so delicious and simple, making the ‘fish’ taste out of seaweed and capers! You could literally serve these with anything, a salad, some potatoes or even some noodles like I have here 😋

VEGAN ‘CRAB’ CAKES 🦀 makes 8
• 1 tin of chickpeas, drained • 1 tin of banana blossom or artichokes, drained • 2tsp capers • 10g fresh dill • 10g fresh parsley • 2 nori sheets (seaweed) • salt • pepper • 4 garlic cloves • 5 spring onions, chopped • zest of 1/2 a lemon • juice of one lemon • 1tsp mustard • 2tbsp vegan mayo • 40g panko breadcrumbs (or regular) •

– fry the onions and garlic in a pan with some oil, then place in a food processor with all the other ingredients (except for the breadcrumbs) and blitz till combined
– now stir through the breadcrumbs, some more parsley and dill and season well
– shape the mixture into 8 equal patties
– now either fry or bake: to fry heat a tbsp oil in a pan and place the patties in, pan fry for 3-5 mins each side till golden
– OR bake in the oven at 180 for approx 25 mins, flipping halfway
– serve with your fave sauce: more Mayo, ketchup, sriracha, whatever you likeeee 😎
