VEGANUARY IMITATION MEAT WEEK DAY 5: SWEET CHILLI ‘PORK’ BELLY with ‘EGG’ FRIED RICE 🌾🍚 made the ‘pork’ using extra firm tofu (&pressed in my new tofu press 😎) and the ‘egg’ out of chickpea flour! Overall a delishhh combo 🤛🏼

🥢 VEGAN SWEET CHILLI ‘PORK BELLY’ 🥢 serves 2
• 1 block extra firm tofu, pressed and sliced into two ‘fillets’ • 2tbsp vegetable or rapeseed oil • 50g cornflour • 50g polenta (optional but rec) • 1tsp smoked paprika • 1tsp garlic granules • salt • pepper •

– mix the cornflour, paprika, polenta, salt, pepper and garlic granules in a bowl and coat the ‘fillets’ in this mix
– heat the oil in a pan and add the fillets, fry till golden (about 3 mins each side)
– now pop the fillets along with all the oils and mix into a baking tray and bake for 20- 25 mins at 180 (depending on how firm you want it)
– remove from the oven, place the fillets on top of some fried rice, and pouuur the sweet chilli sauce over and top with sweetcorn and spring onions 🤤✨
