Vietnamese feast 🇻🇳 Vietnamese crispy pancakes with rice paper spring rolls and a spicy mango salad 🇻🇳🥞🥗 such a tricky one to photograph but my entry for the first of the series with this week’s theme being ASIA ! ✨everyone’s entries have been absolutely insane so far, just simply click on the hashtag to see the wonderful plant based dishes everyone has created! Makes me so happpppy 💕💕🥳 this dish was stressful to make for 4 people but welll worth it and so so fresh 🌱

🇻🇳 Vietnamese pancakes recipe 🇻🇳 makes 4 pancakes

For the batter: 50g plain flour • 50g rice flour • 1.5tsp turmeric • 1tsp salt • 135ml coconut milk • 160ml sparkling water •

For the filling: 1/2 block of firm tofu strips, pan fried • 250g shiitake mushrooms • dash of salt • 200g beansprouts • 1tsp hoisin sauce • 1tbsp soy sauce •

– chop the mushrooms and fry with the tofu, some sesame oil, beansprouts and soy till soft, mix through the hoisin
– make the batter by whisking together the ingredients and setting aside for 5 mins
– set the frying pan on high, put in a tbsp sesame oil and put 1/4 of the pancake batter and cook for 3 mins till the edges of the pancakes are crisp
– transfer to a plate then repeat for the 4 pancakes, placing the baking paper between each one
– serve with the filling and fold over 🇻🇳✨🥳
